    This one looks like a Yin Zhen Bai Cha, and yes, English for it is "Silver Tips".     Excellent set! I see you like brewing your tea in a chawan! I too sometimes use it, depending on the tea I have to brew.
    What tea is that? Bi Luo Chun? Maybe not, however the curly fine leaves looks like that although it is not so "grey" and even the agony of leaves does not look like that.

    Non sono mai stato a Perugia purtroppo, deve essere molto bella. Ho lavorato per alcuni anni a Milano.

    Yes, one of them is Masala Chai, what do you think about it?
    I try to respect brewing times as you said, however, I screwed up with the water temperature. I used boiling water for the white tea and then I saw the instructions saying the water must be at 70 degrees Celsius and not more. Threw it away and repeated in the right temperature.

    There are so many issues about water and temperature in regard of brewing tea. After all, tea beverage is mainly made of water, so, its quality and temperature are equally fundamental.
    As for temperature, it depends on what type of beverage you want to get and, more important, the type of tea, area and period of harvesting, quality of leaves, how the tea has been processed. Then you should also consider the altitude of the place where you are brewing your tea and the chemical composition of water as well. Not all the water is the same and it deeply changes the ending result. This is true for tea and it is true for coffee as well.
    As for steeping times, once again, it depends on what type of beverage you want to get, or better to say, on what you want to get from the leaves. Aroma? Taste? Healthy elements from the leaves?
    I don't want to make things harder than they are, but it also depends on the type of container you use for brewing tea: a teapot is different from a cup and it deeply changes both the aroma perception and taste.

    No matter how it is, enjoy your tea!
