Suile--I'm also a milk and honey person, and have several kinds of honey around. My hands-down favorite comes from basswood flowers. It has the taste that you smell when you strip bark from a young tree in the spring, that green smell of wood. I must admit to the tea drinkers at large that sometimes I consider the tea as a vehicle for the appreciation of honey. I hope that isn't viewed as a sin here!
I love honey. My favorite for tea, when I can find it, is orange blossom honey. It gives a bit of a citrusy flavor to the tea.

You'll probably end up in a mild tea purgatory for that ,but a coupla hail Oolongs and a few praise chai's oughtta fix ya up just fine .

Woke up, seen your post, and followed your advice with Masala Chai, milk, and honey from Ikaria Island.

    Very nice! Thank you!

Our national public radio news just ran a story on Ikaria Island last week, about how shops open at 10 p.m. and time hardly seems to matter... and folks live really, really long there. I wonder if your honey was gathered in the middle of the night. From night-blooming flowers. By vampire bees. Interesting place!

Its true! Shops in this island really open after sunset and during the breezy night.
It surprises me that you know that particular detail from the other part of the globe.

well today started with a pot of lapsang, then i felt the need for a second pot o tea, so it was time for some Russian caravan. had to make a run to get some fresh mtn spring water seeing that our tap has the wonderful sulfer smell. so will be making tea tomorrow with that, can't wait to see if its any different tasting. here is a pic of the spring, kinda a nice set up
