yeah you'll still get plenty of caffeine with the short infusions. The shorter steep times is recommended for smaller servings. I will tend to have a small cup, a small tea pot or gaiwan and a larger tea pot just for hot water. I'll use just a pinch or two of tea in the smaller pot or gaiwan. Ill do a quick rinse of the tea, then I'll add hot water for 15-30 seconds for the first brew. This will make about a shot glass or two sized serving. I'll repeat this for 8-15 servings adding about 5 seconds or so to each steep.
If I'm feeling lazy I'll do a whole pot with an infuser and maybe let the first steep be 30-45 seconds and the second whole pot be 1min or longer. I also wont use boiling hot water, I'll let the water cool for little bit. However doing a whole pot at a time you will miss out on some of the qualities of good oolongs but you'll still get good tea!

A few other oolongs that I ejoy.
Red Blossom Tea Company Tung Ting. This one has an amazing fragrance you can smell right from the start. Taste is amazing.

Also when I'm lazy and just want a bagged tea, I find this Choice Oolong to be very drinkable.

I'm a huge fan of Pu-erh! And I find most of the Numi pu-erh to be just awful. However The candy bar style one they have is pretty cheap and I find drinkable.

Thanked: 1160Love the Ceylon tea Phil....roughkype,about 3-4 min brew time is usually okay for most black teas without getting very tannic.I usually do about 3 min as a general rule.

I can't really call them, Flap Jack, Johnny Cakes, Scones or anything else... It was a muffin experiment that went a-rye... The kids never tell me when we are out of some thing...
As for brewing the tea... I go by color... That is about 1 minute, other wise the tannin is to strong for me... It gives me a bad belly ache...Last edited by NoseWarmer; 09-26-2012 at 10:19 PM.
