It certainly is good, but very lean. You need to add a bit of fat or oil to flash fry.
Yeah, a waste indeed. But they are an introduced species and if not controlled, they devastate the native vegetation. The cullers aren't permitted to take the meat, although I know a mate of mine used to mark the spot on his GPS and the chopper would pick one or two up.
I looked up hunts and they cost 10 to 15 thousand USD.... I would come and take them for free. :)
A mid afternoon pick me up. A quick cup of espresso and a Cannele de Bordeaux that I baked off this morning.

Thank you. I'm looking forward to taking the new pot for a spin. I have a very nice Staub Coq au Vin pot that I've been using for a lot of preparations. But I noticed lately that the coating on my Caphalon Dutch Oven was rubbing off and needed to be replaced. I hated that one anyway. But it was a leftover from about 20 years ago and I was riding it out. I expect the Le Cruestet to last me the rest of my life......if I can keep my wife from chipping the enamel with metal utensils. I've been wanting one of these for a few years now and I gave myself an early b-day present.
