Thread: just wanted to share tonight's dinner with you guys..

    Chicken breast tenderloins with a side of radiators and spinach in a marinara sauce.

    I love to eat off a cutting board when the meal requires cutting.

    Some leftovers: beef & bacon. Just picked up potatoes with butter.



    And dessert by wifey: warm bblueberry pie and home made ice cream with berries.

    Monday was a great day! My youngest daughter along with my two youngest grand kids were here for the afternoon and a bit of the early evening.

    It was a grand day! My daughter helped with straightening up the Boars Nest while the kids played and I worked on supper.

    While I don't have pics of the entire meal of Smoke Cooked Chicken, Fresh Green beans with bacon, onion and crimini mushrooms and Homemade Potato Salad with store bought rolls with butter and jam and some Chocolate Cake for Dessert-----------------Here's some pics of the Chicken in progress;

    After about four hours of smoking with Hickory and Alder wood chips;

    Then into a 300 deg oven until up to temp of 170 degs (in the thigh) about 45 minutes

    Supper was a good thing!

    My Humble Apologies for no pictures of the Incredibly 'and' Deliciously Tasting Supper.

    The Smoke Cooked Chicken almost melted in your mouth. The Green Beans with all of the additions were Absolutely 'Perfect'. Oh and the Potato Salad had just the right 'tang' from the dill pickle 'Juice' that I'd added. I won't mention how the Chocolate Cake was.

    With that said, If you ever get to Walla Walla, you are welcome at my table anytime!

    Also making a smoker to do this isn't that hard or expensive. PM me and I'll tell you how to get started.

    I will add a 'Disclaimer' as I'm only human and things don't always come out the way I plan!

    Just ask my kids!

    This will come as a surprise to some who know me, but tonight I cooked curried sausages and rice for dinner, sorry, no pictures. I didn't think to take any for a post.

    It was the best damn feed I've had in a while. I didn't want to cook a curry, because I normally despise them, but the wife demanded it, and as such, I just went all slap dash about the whole thing. Didn't measure anything, didn't take note of what herbs and stuff I just threw into the pan, but the end result was one of the best damn feeds I ever had the dubious pleasure of cooking. I'm going to have to try doing it again sometime and take a note of amounts to get some sort of an idea to replicate the first time around.
