Prime rib and a good wine. No "moonshine" here.

Gotta get myself out of this funk. I haven't posted here in a while, not feeling myself lately. But today's menu was rather simplified because I threw a pot of chicken stock on the burners today. So dinner was rather simple. I ate from the freezer, steak sandwiches . I Had a really nice skirt steak in the freezer vacuum sealed. I threw it in a water bath for a few hours and then seared it in a screaming hot skillet. Earlier in the day I made some oven dried tomatoes with a shot of thyme leaves. Banged together a garlic mayo and sauted some mushrooms in the skillet I cooked the steak. I slapped it all together on some bread I baked on Friday while my stock simmered.

Ah! I LOVE Podda. I used to buy it all the time but my local stores have stopped selling it for some reason, leaving me with nowhere to source it. It was a favorite of mine. Enjoy it for me.

Sounds lovely, and exactly how I would do it. A blazing hot skillet is the key, and home made mayo is a treat. You really SHOULD post more here Hope you get to feeling better bud.

Yesterday's dinner: Deboned a lamb leg, stuffed with garlic, rosemary and thyme, mesquite smoked on 80c/175f for 7 and a half hours. Last hour added some aubergine. Served with a sprinkle of truffle oil and an italian red wine.
