Breakfast!
Best thing about bacon (Besides the bacon) is leftover bacon grease!
Dinner! No action shot but this bird was cooked in my larger CI pan. Turned out great. Flatten chicken by cutting out backbone with shears. Sear on stove top until skin is browned then flip and throw in the oven to finish it off. Turned out great.

Needed some Sweet Buttermilk Cornbread to sop it all up
This recipe is almost idiot proof now, I do need to adjust it down just a tiny bit because it is for a 10" Skillet rather than the Wedge pan
Drops right outta the pan every time

Two Top Sirloins, first sprinkled with Garlic and I used a Tenderizer on them..
Then pounded into submission with a Mallet and trimmed the fat..
Marinating in the Gallon bag now
Planning on some Finger Steaks and Country Fried Steaks in the Cast Iron more pics later

While not a true cause and effect it is interesting to think about diet over time.
Folk ate more variety including a wider selection of greens and even organ meats a couple
of generations ago.
Still iron deficiency was a thing +100 years ago but may have other names.
A well seasoned cast iron pan does not add iron to the diet but acidic foods will allow
iron to be leached.
Most importantly a cast iron pan in the hands of a great cook adds great tasting food
to the table and that alone can help.
Then there were the days when leaches and bloodletting were a medical thing... we know
better today.
So just say yes to a cast iron pan...

I agree, Say Yes To Cast Iron.
About the next to last line, Leaches are still in use.

A little cast iron cooking tonight. Did the steak using the Alton Brown method. Must say, it turned out real nice. A little butter on the steak at the end.
