    I agree, I use one when I make smoked sausage plus so many other things. Keeps the 'looky loo' down to a minimum so you don't lose oven heat.

    Dinner! No action shot but this bird was cooked in my larger CI pan. Turned out great. Flatten chicken by cutting out backbone with shears. Sear on stove top until skin is browned then flip and throw in the oven to finish it off. Turned out great.

    The beginnings of a great dinner


    Two Top Sirloins, first sprinkled with Garlic and I used a Tenderizer on them..

    About the next to last line, Leaches are still in use.

    Can't say that I'd like to be the recipient of their special gift but if it were to save a finger or such, what the hell.

    For maintaining circulation to save a finger and such leaches are amazing at a number of levels.
    Different than bloodletting as a goal but yes cool.

    A little cast iron cooking tonight. Did the steak using the Alton Brown method. Must say, it turned out real nice. A little butter on the steak at the end.
