    To me, working with more than 5 pounds in a home kitchen gets a little out of hand. Mixing is a step often overlooked or skipped. You have to get the primary bind going or it will be hamburger in a sweat sock. So I too have a 5 pound stuffer. Plus, if i were to have made more than what I did, I would have had to make two emulsions because it would have overwhelmed by food processor. Besides, who the hell is going to eat all of it? I'll do ten pounds of fresh sausage because it freezes better and is easier to do in batches. Emulsions make me nervous. If the situation gets sloppy and that meat gets too warm, the emulsion breaks and you're done.

    Thanks to my buddy Benz I was able to fix his mother's recipe for a Pumpkin Buckle. Since it's only me I cut the recipe in 1/2. It sure smells GOOD! I'll be having a piece here in a bit after some supper.

    The wife decided I should be fed since I've been in the garden digging fence post holes.

    Haddock in panko. Roast veggie wedges and beer battered onion rings.

    The holy trinity, Venison sausage,bacon, and shrimp. Rice and tomato. Various spices as we are trying to use up and rotate the kitchen stock. Hmmmmmmm!

    In spite of my recent posts here, I've been watching my calorie intake during the week. I'm not very good at cutting calories so my wife has been helping by doing most of the weekday cooking for me. She's been doing a great job keeping me on track. I've been really proud of how good she's been doing. I bought her her own new chefs knife too. Here was tonight's dinner, 550 calories.
