    Well tomorrow is Thanksgiving and I've been getting ready, including the desserts.

    My maternal grandmother used to talk about how she would make mincemeat pies using the meat from the neck of a deer. Which got me to wondering-- So with a little research and the help of the internet I found a recipe published in 1845 by Eliza Acton's Modern Cookery for Private Families, in England. However the original made a TON of mincemeat but I found a video and the guy had cut the recipe down to a single use.

    My son in law didn't have a deer's neck in the freezer but he kindly gave me some elk meat to use. Now it doesn't take a lot of elk but it had to be cooked before so I used the oven and sort of roasted it to 150 internal temp.

    I had never 'boiled' a lemon before again the internet was very useful. I had to purchase some brandy and I had some sherry so away I went.

    I have a friend over in the UK and they make mini mince pies but I used a 9.5" tart pan and lined it with a short crust but left it without a cover. I put it in the freezer till I was ready to put it all together.

    I let the mixture soak up the alcohol for a few days, and then today I put it together and it smelled and very good.

    Anyway, here's the results:

    I've got it out of the tart pan and on a plate so it can be wrapped and refrigerated till tomorrow. I'll let it warm up to room temp and sprinkle a little powdered sugar on top and then we'll see how my guests like it. Wish me luck---

    It's in there. It kinda fell apart, after several hours of cooking. I've got 4 thighs worth, in around 6 quarts of broth n noodles, and one carrot.
