    Hey...I put miracle whip on scrambled eggs. Have known many that use ketchup on them

    I saw these big beautiful jalapeños at the grocery, and none of mine are ready to harvest yet, so I had to have some, deep fried and stuffed with corned beast hash and shredded cheese.

    Oh and hushpuppies on the side.

    Went a little fancy today. Beef Wellington, with prime chateubriand, pate foie gras, black truffles, garden jalapeños with some locally grown bellos for the bruxelle. Mustard was Zatarain's creole mustard, but shame on me, store bought puff pastry cause running outta time. Asparagus with hollandaise courtesy of the wife, roasted baby potatoes with herbs and bacon, bloody mary pre-dinner, 2021 Louis Jadot Beujolais to accompany, Otimo 40 yo tawny port with sweetened columbian espresso post dinner. Oh, crepes suzette for desert but rather than make exactly the right number of crepes I decided to layer them and slice like a pie to serve. Wife also made whipped cream with bitter chocolate and orange zest to top it. Our guests left happy.

    So, catch of the day Friday was four channel cats, a redear turtle and a softshell. I usually don't mess with turtles unless they are snappers and good size ones, but the redear was decent size and I hadn't made turtle soup in a while. Little did I know but they are even tougher to open up than snappers. Couldn't get a knife point into the joint, had to use a chisel. Ended up giving the softshell a pardon, we released him into London Avenue Canal. THIS,

    Haven't had snapper soup since I was a kid. Neighbor used to trap them. 13 different flavors from what I remember. It's been 40 some years now.
