    You can make it in under an hour. Just don't stop stirring the roux until you quench it with your stock or water. And don't use canned okra. Fresh, or in a pinch, high quality frozen. We grow ours, and the surplus gets vacuum bagged and frozen.

    Figured....Might as well make a couple pizzas out of um.

    One deluxe, and one double pepperoni, sausage and cheese.

    Pork and yard greens. Tenderloin cooked sous vide at 144°F for 8 hours, with herbs and spices, then sliced into medallions. Greens are all wild or volunteer or hangers-on from last year that just refuse to die. Broccoli side shoots, dendelions, bok choy, collards, dollar weed, and radish sprouts. All braised together with onions and herbs from the garden. The tenderloin was on sale, too. So, it was a very cheap meal. Oh, and white jasmine rice underneath it all. I had to buy that. And the ruby port for the deglace.

    Lamb chops in herbs with potatos sprinkled with parsley & dill. Salad of tomatos & onions with olive oil. Czech bier.

    Cooked for the wifey tonight for the first time in a while.

    Greek style lamb with fondant potatoes.

    Roast pork fillet with rosemary and goose fat potatoes, mushroom sauce and caramelised veg.

    Then a cheeseboard.

    Wife has been OT for a long while. Take-out sucks. No decent fried chicken nor burgers close by.
    Tired of Mexican! Just batchin...


    Had a Ribeye last night with a salad. Sliced the leftover thin and made a sammy.
    Sauteed Jalapeno slices and onions topped with cheese and the iceberg.
    No maters, but sloshed with salsa. Ranch on the bread sides.
