I'm with these guys for sanding the pits off the spine, Mike. You won't be causing any harm to the geometry if you go just over until you meet the top edge of the hone wear, if you even need to go that far. Looking forward to seeing this one shine!

Nice Rez. Ive been leaning towards putting together a 7 day set of Henckels some day. Not right away. But who knows what ill really end up with. You got a good group of them for sure.
It's just Sharpening, right?

I like to hone most knives with the stone in hand. Hopefully I can explain this for how I would hone that type of blade.
Picture a swooping X stroke with the knife, and rotating your wrist that's holding the stone clockwise to follow the edge. It takes a bit of practice, but becomes fluent after you get the hang of it. Its just hard for me to get my wrist to turn that far, with the stone sitting flat.Last edited by outback; 03-06-2017 at 04:39 AM.
