I find that I 'prefer' a semi smooth steel. It's hard to explain. When you run your thumbnail against the 'ribs' from the factory if they are like dragging the nail across say a fine file, then that's too rough. At least for me!

Wait, you cut brisket with that Tom?
Has to be amazingly sharp. I prefer a scalloped edge for brisket. Helps with nice thin slices, 1/8" or so is my preferenceLook sharp and smell nice for the ladies.~~~Benz

Gittin some work done to the Curley. Sanded the light pitting from both sides of the blade, stopping for the night at 800 grt.
