I like that ! No egg cups to deal with....smart. When I started this thread, I fantasized about being on a train in a dining car and dreaming about what the meals looked like. Good for you,fantasy is a beautiful thing .... or we wouldn't have things like Disneyland .

The food blog I got the recipe from would probably interest you a lot, Nightblade since the dishes are rather hearty. Many of the recipes are from Medeival Europe.

You guys are going to be the death of me, with these links. Now I have to try them.
Anywho...a wee bit of leftover vegan overnight oats + half spinach omelette with feta cheese and back bacon.

Menu:

Steel-cut oats with almond butter and honey
Banana
Fresh squeezed pomegranate juice
Assam tea

I squeezed about 2oz. of juice from one pomegranate. No wonder the bottled juice is so expensive. No pic today.

This also reminds me of a meme the wife read to me last night... "How to prepare tofu: throw in trash. Fry up some bacon."

The recipe calls these "Paleo Omelette Muffins." I call them darn delicious.
