    Baked a couple loafs tonight....

    40 grams of Dark Rye , 160 grams of Einkorn, 600 grams bread flour, 125 grams of starter, 18 grams of salt

    One of the wife’s favorites. Yeast bread enriched challah loaves tonight, what with it being the start of Hanukkah and all.

    Switched to whole wheat or rye bread these days. Better for my diabetes. A loaf a week.

    i make white bread in a bread maker, sod my diabetes, that's what my insulin is for.
    But, I cant make a loaf a week because it goes blue and furry before that!

    That's what a freezer is for. Bread freezes very nicely.

    You can make whole wheat Challah. It's different and unconventional but you can.

    True, but now I am addicted to my Pullman pan and lazy as a snoozing dog to go the extra mile to braid the loaf.

    You do they lazy man's braid by dividing the loaf into 3 parts and just placing them together for the final rise and bake and you get a segmented loaf.
