Baked a couple loafs tonight....
40 grams of Dark Rye , 160 grams of Einkorn, 600 grams bread flour, 125 grams of starter, 18 grams of salt

Braids are a little messy, but it all tastes good!

Switched to whole wheat or rye bread these days. Better for my diabetes. A loaf a week.

i make white bread in a bread maker, sod my diabetes, that's what my insulin is for.
But, I cant make a loaf a week because it goes blue and furry before that!- - Steve
