    Luckily I didn't get smoked out too bad. I was waiting to see what happened. Just made the apartment smell funny, and now my oven is clean.

    Ill take your advice and stop scouring them. Thanks!

    He's got four pans....one should be filled with bacon,another sausage,another spam and last one pancakes ....then a picture of everything on a platter with his smiling face getting ready to dig in......yes I want to live vicariously through his cast irony or is it mine ??

    You're most likely seeing flash rusting. Make sure to be doing the final rinse with cold water. While it may not totally eliminate the flash rust it will reduce it by a lot. Like was said before, if not to bad just season over it.

    Those skillets look ready to use imo.

    I always rinse with cold, wipe them out, then put them on a burner for a couple minutes to dry out. Them wipe them down with a thin layer of oil. Been doing it that way forever, I guess.

    I heat mine then rinse and scrub with hot water,then on the burner to dry followed with a wipe of oil. No rust ever.

    I was able to minimize the redness by using cold water and drying them quickly on a burner. Definitely going to start seasoning them tonight or tomorrow. Dare i ask what oil folks use? It seems like that debate could go on forever. I have EVOO but i might pick up some Crisco. I got a big ol' tub of lard in the fridge as well. I dont throw out bacon grease. I cook my eggs in it, and a grilled cheese with bacon fat instead of butter is almost so good it's a sin.

    Yes what fat to use could start WWIII!

    I'll just say that any fat is better than no fat at all. I'll also add that the system that Glen posted worked very well with my peanut oil so I don't see why your lard wouldn't work.
