Just simmer cooked rice in sweetened coconut milk (add a cornstarch mixture for desired thickness)can be served warm or chilled. Cardomom or cinnamon are good spices for this and definitely add some vanilla. If adding extract then add in after the cooking process. Raisins and or crushed pistachios are nice additions as well to this. Have a nice fruity wine or even a fruit beer or cider with it. Will any of this work ??
That sounds amazing, I'm not a fan of squash, but with some personal jigging I think that's a winner. Thanks kindly.

Alas no dessert, we either do starter or desert and I've already decided on a shallot and goats cheese tarte tatin.

Thanks again for the suggestion, will definitely report back with the results.

Lol...I wouldn't think of topping any Mom or Grandmom for that matter. This was basically a recipe I got from an Indian chef. Good any ol time.

    Nightblade's post sounds delish!

I'm a pasta lover, so I'd put together a nice four cheese ravioli...
