For tonight, I kicked the wife outta the kitchen, got tired of her screwing up my brisket, always on the dry n tuff side.
But I've been cooking them at 350°f, for 4 hrs. she says.
Low n Slow, baby.
275°f 6 hrs. Basting every hour, after the first two hours. Pulled at 180°, let rest while I put together the sides. Homemade Mac n cheese, and sweet peas.
I swear, my wife only married me for my meat.Mike

It is hand chopped with knives.
Kitfo is made with VERY lean beef.
The meat loses it's deep red color due to the mitmita added to it.
Kitfo is my primary comfort food.

Christmas Dinnah .....one for 128 degrees...(for me)....the other rack for the well done crowd...135 + degrees......Iam sick of having to please everyone’s done ness with just one roast....so this year,it’s all about ME !!

Start by making some crepes.
Roll and trim into strips.
Put in bowl, pour bouillon or broth of choice over top.
Pancake soup anyone?
Like wonton soup, only better..
Also made cinnamon sugar crepes for dessert..

Thanked: 1160My supper tonight,Ive done similar before but,it's tasty ............Sweet potato coddle. The potatoes are not seasoned sweet but instead savory and the bacon and cheese and dash of heavy cream helps. I wasn't heavy with the dairy , just enough to make it saucy but not gooey.I won't lie though.....fattening heh.
