However since I don't have a slow cooker and that since I'd be home, the beef would have been slow simmered in a cast iron Dutch Oven.

When you say--'Flattened' are you talking about a 'Spatchcock' Cornish Hen?? Where the back bone is either removed or just split then the breast plate is broken so that the bird lays flat?
