Best flavored fish there is in my opinion. Perch caught through the ice.

Last nights supper;
Roasted Cornish Rock Hens with an Asian Glaze
Yukon Gold Potatoes tossed in EVOO then sprinkled with Lemon Pepper and roasted
Steamed Green Beans then tossed in turkey stock seasoned with fresh ginger and marjoram
Dessert was homemade 7Up pound cake with homemade vanilla ice cream.
Our house is as Neil left it- an Aladdins cave of 'stuff'.

Yes sir.!! Found where they were at, on Friday. Took those in about five hours, Saturday afternoon. Cleaned um Sunday morning, and let sit in bowl of water, in the fridge all day. It removes any blood, and firms the flesh. Plus I can keep them that way for three days, before freezing. If I don't eat them all, first. Nothing better than fresh fish. Especially through the ice.!!
I swear...the flesh is sweet, and free of that strong algae laded water. To explain this.... The lakes around here are small, and get a lot of boat traffic during the open water season, once the November gales come, the boaters are gone. Thus gives the water in the lakes, time to settle, and becoming clean. But when the ice comes, the water becomes very dense and pushes all the sediment to the bottom, and in return, gives us near gin clear water, and that in return, cleanses the fish.
If any of you out there have eatin your share of fish caught and eatin at different times of the year, you know what I'm talkin about.Mike

Just read this article.I am a big fan of southern food which might be considered odd since I was born and raised in Northern Michigan,yet I totally get and agree with these foods and have had some of them and loved'em.Anybody else think the articles author is dense ha ha?
