    Yup, simple pasta meals are awesome this time of year.
    Rotini noodles, covered in browned butter and topped with mizithra cheese and a side of garlic and oregano covered naan for dinner up here tonight.

    Goat cheese.
    Hard, but not as hard as Parmesan. Sharper flavor than parm too IMO.
    Grated and mixed thoroughly. It works with the browned butter very well.

    When I make Garlic Bread for more than just me I like to split the loaf of French or Italian bread in half lengthwise then make a mixture of butter (real butter) finely minced garlic, chopped fresh Rosemary then spread it on the halves. Then grate Romano cheese on top and put it under the broiler until it's hot and bubbly.

    I may have to play with that mizithra as I find that the company that I provided a link for is sold here locally.

    I have a local cheese factory that makes an Asiago and Parmesan style cheeses. They aren't in France of course so can they call it the real thing?

    Any time I am in the neighborhood I stop and grab a couple of pounds especially their Asiago. Tonight I has some on a Whatever is in the refrigerator or Leftover dish and it always adds a good topping to a quick meal!
