    Terrible news this morning. Bocuse was the most influential chef for my cooking. He was the gold standard. He seemed to understand it all more so than any of the rest. The hallmarks of his cooking were abundance, gluttony, luxury, and tradition.

    My condolences my friend; I just finished reading the article and watching the video, your mentor was quite a man! 91 is no record but a damn good average.

    You might want to consider having that signed piece put in a display case for preservation.

    It looked like the guy in the video needed to sharpen his knife as that pig bladder didn't seem to want to cooperate. But once that bird was out, my how it looked so succulent.

    I was just yesterday watching for the 4th or 5th time the Anthony Bourdaine Parts unknown episode of Lyon where he sits down for a Bocuse Meal with Paul presiding and then goes Duck hunting next day at his home grounds. Fabulous watch it on Netflix while you can, Great episode.
