    Pulled the carrots out before they were mush then when the oxtails were super tender I pulled, covered and kept them warm. After straining I returned the sauce to the Dutch oven and cooked the noodles. Once tender they were plated to a bowl, some sauce added then some tail pieces some carrots and it was supper time.

    Smoke cooked? I always find it interesting how much smoked poultry dark meat comes out tasting so similar to ham.

    I once cured and smoked a whole duck, the family was impressed, but I didn't tell them how much the damn duck cost.

    Yes smoked, I cut the turkey into pieces cured then smoked.

    it's gumboesque and DB2 friendly(No Roux) but mostly it's good.just on the fly ground beef, shrimp ,bell peppers,beef stock ,onions and believe it or not a handful of whole oat groats(acts and tastes like brown rice actually,Cajun spice(homemade)and a little coconut oil for a Caribbean touch. Getting through the pandemic one plate at a time.
