    My buddy Joel (Benz) had quite a bit of farm land there in North Dakota. He would have what he called a 'Gentleman's Hunt' with friends for pheasants. His choice of shotguns were side by side. He had one that was appraised at around $10,000 and it was a beauty. I don't know who the maker was but it was highly engraved, I thought it was almost too pretty to fire. He said he'd only take it out for skeet shoots so he could show it off.

    He and his mother would pressure can the older birds. I never got a chance to try a canned pheasant when I was visiting with him.

    I told him that my childhood memories of pheasant was that I'd be eating away and bite into a ball of shot. He laughed and said he used a metal detector to make sure all shot was out.

    Tim, My son was here when when this post came in and I asked him if he remembered when he was quite small and I'd be frying bacon for a dish.

    He was puzzled and I said I ALWAYS cooked more bacon than I would need because he was like that dog in the Bacon Flavored Dog Treats---

    Bacon? Bacon? Bacon? So I always needed to cook more than I'd need.

    He said he remembered and had a bit of a smile on his face.

    This bacon was not fried.

    About 3/8 inch slices cooked on top of the roast.

    Venison can always use a little more fat.....

    Baked, Fried no matter--eating bacon before it's supposed to be served is Great!
