My concern would not be whether the acrylic is stable, but rather that the different rate of thermal expansion between acrylic and steel would cause stresses to develop where compression of the acrylic occurs (Perhaps between rivets?). Just a thought. Your project is looking great btw [emoji1]

If they are too thin, what about stacking a few? Seems you have enough material.
Or perhaps a liner of white would look nice and add thickness?
