    Xmas meals Lunch and Dinner were done American style. Lunch was homemade pulled pork and coleslaw on a buttered roll, followed by a second one because the first was so damn good! And dinner was a starter of smoked ribs (Home smoked) with the mains being smoked BBQ salmon and smoked slow cooked prime steak about an inch thick. All thanks to my next door neighbour who wouldn't see me spend Xmas day at home alone (the family are all off visiting while me and the dog spend some quality time).

    On top of that I got to spend some time with a new found friend from the Swedish parts of this forum, Mikael. I got to give him an orientation tour of the area he's living in and it's surrounds. Even though I will see him again over the course of his stay here, I hope he has a great time while he's in this country and that he and his daughter see and do some interesting things together, and leave with many happy memories.

    Merry Xmas everyone. It's been a great day for me, and I hope everyone else had even a half the enjoyment I had.

    We like seafood on Christmas Day.

    I made seafood gumbo yesterday.
    Boiled 4 pounds (1.81 kgm) of shrimp. Peeled and then boiled the shells for stock.
    Cooked the roux, added the trinity (green pepper, onion, celery), added the stock and did the base flavors.
    Added chopped clams and white crab meat.

    Refrigerated overnight. Will add the shrimp and oysters before serving over rice.

    That is for us. The daughter-in-law does not like seafood so I get to go outside, freeze my a$$ off, and cook her a steak. No problem. I like steak too.

    And a very Merry Christmas to you too Steph my friend. You should have been with me yesterday at my neighbours house. I would have liked to have had your best foodies opinion on what we ate. I was highly impressed to say the least!
