    Christmas Leftover Supper: Homemade Tamales, some Cajun n sage spiced rice and Egg over easy with Cajun spice and brown butter. And a little Tawney Port to ease my aching back after five hours worth of shoveling snow tonight. Feeling warm inside and out now.. Name:  014.jpg

    A very traditional and ancient dish this, lamb ribs are salted and cured, then before use watered and steamed.
    Since I also like smoked food, mine was the smoked variety.
    In the glass: Hefe weissbier. Unusual choice for such a rich dish, I'd usually go for a darker variety beer for this dish, but one of my x-mas presents was a book on food and beer. Having read some in it already, I got inspired and tried this combo. I found it unusually befitting. Do pardon the terrible picture, it was a phone snapshot. For those planning this dish, I can report that in stead of the regular 3 hours in steam, 30 minutes in a pressure cooker works exellently.
