    I grew up on the coastline in a fishing community. We had an old neighbour who used to fish wild atlantic salmon that he cold smoked himself over wood and juniper needles, before he sold the bulk of it to the local shop. I spent a lot of time with him, and ate quite a bit of his fish. Nowadays, most smoked salmon you get in the shops here has nothing on that fish that he produced. What I'm trying to say is, I have particularily high standards when it comes to smoked salmon, and I won't touch the stuff they sell in these shops. Yours looks exellent. I'd love to have a go myself at that old art, but unfortunately I have no cold smoke facilities. Thank you for posting, and good job

    Main dish: Roast goose with apples and cider gravy
    Side dishes: Potato, celeriac and pear gratin, Japanese squash gratin
    Desserts: Winter pudding bomb, Spiced apple jam Frangipane pie, Christmas cake

    Well tonight turned unexpectedly into Christmas dinner to myself...the Polish way. Owned and operated by a sweet Polska girl too .I messed up and didn't take a pic of my soup ,a white Polish Borscht served on a wooden cutting board in a wooden bowl with a small side of mashed potato and a hard boiled egg. I was in Polish peasant heaven what with all the traditional Slavic folk music playing and the tree and all. Red Kielbasa was the main course along with stuffed cabbage roll and Potato Pirogi and a Polish Lager. For dessert it was Polish apple pie and I swear the ice cream was homemade as it was so fluffy and creamy and then bit of Serbian Walnut Brandy to finish.     Christmas eve dinner: Norwegian speciality dish; Lutefisk with swede mash, mushy peas, mustard sauce, taters and bacon. In the glasses: christmas ale and aquavite.

    The winter pudding bomb has been assembled and is now in the freezer, it will receive its chocolate cover tomorrow night.
    The royal icing on the Christmas cake is setting.
    The spiced apple jam frangipane pie is baking in the oven and should be done in 20 minutes.

    It sure is more fun spending the day baking instead of working in the office
