They say no one wants to see how the sausage is made. Well, look away. But here it is. Start to finish. Saucisson a l'ail. The pork seasoned and curing overnight, rolled into form with plastic wrap and vacuum sealed, cooked in my trusty SousVide Supreme, chilled in ice, packaged for freezing, and served up with cornichons, cheese, and good Dijon mustard.

Dammit OCD pictures like that make me look at the cat and wonder what spices and seasonings would be needed to turn her into tasty sausages!

You might take your preference for feline down to the local Chinese Buffet. Maybe they can point you in the right direction.
Several years ago there was a fire in an Chinese Restaurant in Newark N J. Fire Marshals are required to inspect the entire building after a fire and clear it for habitation. Upon inspecting the basement, the Marshal found a collection of caged cats, dogs and various other forms of wildlife. Be careful where you eat.JERRY
OOOPS! Pass the styptic please.
