Fresh caught ...while trolling that special fly. Now a little old bay seasoning and lemon slices in the cavity ,wrap in tin foil and on the grill....Brookies are the best tasting trout..by far!!!

I'd leave that beautiful skin on there and make it nice and crispy.

Got it at Wegmans - it's a store chain originating in Rochester NY, but they have been expanding through the northeast and are now even in DC.
It's pretty much everywhere I've shopped though, from wholefoods to the tiny asian grocery store by my friends' apartment in NYC https://www.talentigelato.com/store-locator/

NEVER...ever , go to a Grocery on an all day empty stomach !! EVER !! Tonight's splurge of weakness was.....Maytag Blue with Whole wheat Pita, various olives (Sacillian,Spanish Greens, Feta and Garlic stuffed,Kalamata) Artichoke hearts with more Feta and lots of Olive oil of course. Hot Earl Grey tea. Main Course...Lamb chop with smoked Paprika and garlic and Cayenne with Scarborough Herbs and bacon with a side of Italian Green Beans with Pearl Onions and a lot of guilt followed by a rush of pleasing Endorphins to round it all out.
