    I use mild chili beans so her taste buds are not offended

    I pull my portion out and toss in chipotles and arbol peppers

    I made Chili for one of the meets here. Spazola's mom (bless her soul) helped me season so it had a real north Texas taste.

    Here we tend to cook on the mild or plain side and let the person who is eating it add what spices they like.

    I ruined my breakfast/brunch at work the other day when I accidentaly opened the wrong side of the garilc salt and dumped a table spoon instead of a sprinkle.

    I had to throw about half of my leftover hotdish away!

    Years ago on opening day of deer season, my dad was going with his buddies, my two brothers were going with their buddies and I was going with mine. It was a bit cold and rainy so mom decided that chili and cornbread would be the thing for supper.

    So she was cooking the chili and she tasted it and thought that it needed a lot more chili powder so she grabbed the chili and dumped it in. When she put it back in the cupboard she say the label and it said---Cayenne PepperName:  no see smily.gif

    Well it's a good thing that she hadn't stirred it because it was the HOTTEST CHILI I EVER ATE. Hehehe

    I've had the COVID this week, and it pretty much put me out of commission, so my wife's been run a bit ragged this week.

    Today I felt considerably more human and the bug is waning, so I elected to cook for myself and the good lady, a little thanks for holding the fort this week.

    Leg of Gressingham duck with roast potatoes and carrots and some Brussels sprouts. Also put together a little bramble and port sauce for her.

    It was pretty damn tasty.

    In our house it's the opposite. My lovely bride makes a great chili but no beans. I never met a bean I didn't like. My favorite way to add beans is to add a can of Ranch Style Beans.

    I use a blend of ancho, gualillo, new mex, paprika, and a pinch of Spanish smoked. It keeps the flavors rich but not real hot. I use them in descending order.
