    Well you can't have any of this batch As this batch is for the kid's Christmas, but come on over as I've got some from the last batch in the freezer plus some Italian and I'm sure that there's a little bratwurts in there also/all homemade .

    Thanks my friend, I've also made some Caramel Corn, Peppermint Bark, Chex Mix and some Peanut Brittle for them.

    I fondly remember my beloved Granny Davis arriving with boxes of popcorn balls, divinity, sea foam, fudge on and on at Christmas time when I was young. So I guess in a way it's A Family Tradition.

    That is a monster looking grinder. We have two pork butts in the freezer waiting to become sausage after the holidays. I also pulled the last of the bacon out of the freezer so I need to get some pork side and get about making bacon. Going to be a busy January.

    I got started making my own sausages, and other cured or smoked products many years ago because my dad used to talk about the dry cured hams, bacons, the fresh and smoked sausages that they made when he was a kid out on my great grandfather's homestead. The problem was that he didn't Want to help. He HAD to help and he never learned how to make the precious meats.

    I vowed to never let that happen in my lifetime. So I started reading and collecting equipment. I have All of my recipes written down and All of my kids know the basics however I am trying to get each of them to make at least one batch of smoked sausage from start to finish. They all have done smoked turkeys and chickens and have made fresh sausages so I've got that covered.

    I've used a Choprite #22 hand grinder for over 35 years. I once helped a guy grind 120 Lbs of pork TWICE to make his mother's German Sausage for the men's breakfast at the church I was attending. How I wish I had this big guy then!

    I see that most places want about $300 for a new Choprite #22 these days. I got mine for $20. A friend had purchased brand it new (about $170) to grind venison and it didn't work worth a S**t. So he sold it to me. I found that there was a dollop of tin on the face where the ring holds the plate in place. So I filed the tin down and Voila! It worked like a charm.

    Well after all these years I'd grown tired of cranking on the Choprite and my nephew had worked for Cabelas for many years but he was moving to an area where there wasn't a Cabelas so I asked him if he got an employee discount/which he did so I bought the 1hp through him. It was listed at $499.99 and I got it for $280.00 delivered.

    I chose the 1hp as it took the same size knives and dies as my Choprite. While it works Great! I'm pretty sure that my old Choprite will be able to grind meat long after the electric grinder has been long dead and gone.

    The first time I read that I thought you were talking about different flavors in the sausages.

    It's way cool of you to keep making the sausages and other things. It is a true dying art.
    Not sure where you get your pork butts from, but Gordon Foods Natural pork butts are by far the best I've ever used. I cook BBQ professionally as a side gig. And do a lot of catering and charity cooks. These are the best I've used out of many many different brands. And at a real good price too
