There was a well known down homey eating establishment called Skeeter' Big Biscuits. The were known for their biscuits which were, well, big as the name implies, like the size of a bread plate. By the time I got to town, they had a couple of locations but the main branch at that time was a large space in a shopping center on NW 13th street. I was open 24/7 and we patronized heavily by inebriated students after closing time at 2am. The most popular cheap specialty was a concoction called the Asher Special. IIRC, it consisted of one of the big biscuits with fried egg, hash browns and a slathering of country gravy all piled up high. Great hangover prevention, no? I was a grad student, so I could actually afford breakfast meat unlike some of the undergrads, but I had to try it once. it was filling to say the lear and quite good at absorbing any alcohol that was still in the stomach. I do not have the huge biscuits, but I think that I will try to create a version myself using sausage gravy instead of plain gravy because I can still afford breakfast meats. Although the taste way get washed out, I still plan to use the duck fat to fry up the potatoes because, well, it must be done. I'll let you guys know if i survive.
If anything the duck Fat will make those taters awesome and as for the biscuits make a big biscuit. Those frozen biscuits ya buy in the store can be made into one y'know ?

Default The advantages of living next door to a fjord and having good neighbors.

One of my neighbors had gotten more cod roe in last evenings catch than he and his wife manages to eat.
Lucky me, we are good friends so he dropped by. Cod roe fresh from the fjord is delicious so
I prepared it the way my Grandfather showed me some 40 years ago. And had a delicious brunch this morning.

I did the hash browns in duck fat. Wow!!! The fat makes then taste slightly sweet and duck fat basically smells like some kind of expensive food grade perfume when it gets heated up. Good stuff. I am glad that duck fat is fairly easy to find nowadays.
