    Default New Years Eve Dinner

    Ribeyes, lobster tails and Cheddar Bay biscuits. Weber charcoal grill with lump charcoal and some soaked chips and chucks of hickory. Steak got a little overdone for me, but still juicy and tasty.

    Today's dinner:
    Sous vide cod fillet with bacon wrapped italian green beans, vinegared melted butter and citrus foam.
    After all the heavy food during christmas it is good to get back on track. We have some of the best tap water in the world here, so that's what's in the glass.

    After a week the corned beef is ready to cook. It is now boiling on the stove.

    About 3 hours until I find out if it was worth it.

    I've got around 10lb of pork waiting in the freezer to be turned into bacon, and I need to make some more guanciale, as soon as this cold spell lets off.

    I would sure like to see your results. I will have to look more into guanciale.

    Never made corned beef, but keen to have a go after seeing that. My wife cooks it in a slow cooker for 5 hours, puts veggies in with the meat and cooks another 3 hours. Meat always nice and tender.

    I bought a new cast iron Dutch oven the other day, and I've been using it on the stove to do a lot of browning. So far cooked two steak pies in it. Today's dinner also prepped in it, a sort of mushroom stew. Served with brown rice. Also ordered a new cast iron skillet, I always loved cooking on cast iron and am rediscovering the awesome wonder

    Any of you guys ever cook on a salt block. I got one for christmas and kinda nervous about using it. Its one of these...

    I was thinking seared tuna would obviously be good but my wife said I can't do that until she's not pregnant anymore and can enjoy it.
