    Beets and avocados. I would have probably never thought of that combination along with peas.

    I hope it tasted as good as it looks!

    Thank you, it really did. The dish is based on a vegetarian recipe by Yotam Ottolenghi, but since I am a carnivore I added the meat
    If you are not familiar with Ottolenghi, check him out (there's plenty online, I plan to buy his latest book). I often get inspired by vegetarian recipes, but I use them as side dishes

    Tonight was the first time I tried scotch eggs. They are an interesting dish. This was at a restaurant. I will have to try these out at home.

    The versions I know are great. The eggs are not cut in half the meat and not separated from the egg. Basically a spiced pork {sometimes Venison and Pork etc.} breakfast sausage cooked around a hard boiled egg.

    Use your imagination and you can't mess these up!

    P.S. remove the shell before covering the eggs with the meat!
