    It is pricey. But if I buy six at a time I have a lot to work with. I get a good pot of duck fat, 12 legs confit, 12 breasts smoked, and a pot of stock. If you buy one duck you can't do that. Buying in bulk gives me the capability to make full use of all of it. So there is an economy of scale that you don't get with buying one. Plus, I got these on sale via D'Artagnian. So the price was very agreeable. I also got 4 squabs in my order. If you do it right the price isn't so bad.

    Unfortunately wild mallards don't taste Anything like Long Island Duck, besides I've probably spit out my weight in buckshot from eating all the birds dad brought home through the years

    Well gents.

    I very rarely if ever endeavour to cook asian food. But today I decided I was going to risk it.



    Beef Tataki, a citrus soy, soy and sweet chilli. Also some onion rings (ok not so Asian)

    Sticky rice with corriander. Stir fried shrooms with some chilli lemongrass shallots and something called galangal. Which is apparently related to ginger and smells a bit like parsnip.

    We weren't sure about it but glad we gave it a go.
