    It had been many years since I'd had 'Eisbein' so a few days ago I made a curing solution and put some pork shank and hocks in it and let it cure in the refrigerator.

    Supper last night was the Eisbein, red potato with a gravy made by thickening some of the cooking liquid from the pork and some sauerkraut.

    Pretty much. Bed of rice about 1/2 to 2/3 as deep as the pan, then layer minced boiled chicken on top of that. I sprinkled a little poppy seed on top of the chicken, the next layer is 3 part cream of mushroom soup, 2 part sour cream mixed well then layered on the chicken & rice. And that crust up top is crumbed Ritz crackers with butter mixed in. I sprinkled a little poppy seed up there too. Mostly cause I couldn't remember for the life of me where it was supposed to go in the grand order of things, so I hit it in 2 places to be sure I got it right. Baked 25-30 minutes at 400 degrees (lost track of time, but caught it just right).

    2 lbs chicken, 6 bags boil in bag minute rice, 4 bags of crackers, half cup of butter (probably could've used twice that considering I made 2 pans but I was being stingy with it), whole 16 oz tub of sour cream, 22.6 oz can of cream of mushroom soup, and poppy seed to taste to make those 2 pans. Half that if you only want 1 of course.

    Pans are 13 x 9 x 2" if I remember the dimensions right.

    Incidentally I only set out to make one pan. But even though I know the recipe, 1 lb of chicken (2 whole boneless breasts) never seems to look like enough in the store. And I made the mistake of shopping and cooking hungry. I actually hadn't eaten all day, so overkill inevitably ensued.

    Edit: For a little extra flavor - boil chicken first and fish it out of the pot with tongs, then boil the rice in the chicken broth.

    One of these days I want to try this in an iron skillet.

    I printed out your recipe for my wife and this is what she came up with. A little variation like only 1 pan full and not as much sour cream.

    Tasted very good. Didn't need any extra salt at all and I added a little pepper.

    Hehe, I think I might take your wife's notion on sour cream in the future. Tasted great as is, but I think that's what made my stomach angry - heart burn that could take down a small mule.

    The extra pan just means I have lunch pre-made for a few days.

    First time ever, finally got around to a recipe that Shan has been wanting me to try..
    This is the Hell's Kitchen version using the Mushroom Duxelle

    I was pretty happy with the outcome but it was a ton of work, took me almost exactly 2 hours to build it..
    Really pushed my limit with making the Crepes

    I might make it again for a special occasion
