Thread: just wanted to share tonight's dinner with you guys..

    I learned A LOT! First I made way too much peach filling. I turned the left overs into a kind of 'Compote' for pancakes, waffles or even on vanilla ice cream

    Second I used too much thickener, I'd prefer to have a little bit of 'juice' coming out.

    Third, I made the crust too thick.

    Fourth, I baked it too long.

    Between #'s 3 and 4 the crust wasn't tender and I love a tender crust. (with the amount of butter in the flour mixture it should have been very tender).

    All and All, not bad for my first attempt!

    First, I'm really glad you made this. I have been sitting on this recipe for about a year and haven't gotten around to making it. Second,I'd say it looks good. The crust may be a tad thick but a tart crust should not be overly flaky. It has to have structure enough to hold the tart together. I think there is an unrealistic belief, and desire for, crusts that don't require teeth. And that I blame on too many sweets bought at the grocery store. It's the equivalent of too many sandwiches made with Wonder bread. But the thickness will inhibit fork tenderness as will the recipe and technique. Finally, be careful of loosening the filling too much. Unlike a pie that is served out of a pan, this will get soggy and collapse if it's too wet. Great job.

    My wife doesn't care much for pork. I don't get it. I miss a good pork chop.
