    I did my little single Anglo guy version of arroz con pollo. When I do a small batch for myself don't put the chicken in the rice pot. I marinate two chicken thighs in Badia mojo and then throw them in the oven for 45 minutes so I get crisp, browned mojo flavored skin and fat. I just boil up some Vigo yellow rice and cut up some Cuban bread and I am good to go.

    just made a Creamy Parmesan Risotto ,with sautéed zucchini and mushrooms, topped with Shrimp....OH BOY !!!!

    This afternoon I broke out the Weber grill and cooked steak. I used lump charcoal and some hickory twigs from the yard. I'm not sure what a Cowboy Ribeye is but the two steaks I bought had a combined weight of 2.8 lbs. and we're about 1.5 inches thick.

    Cowboy Ribeye
    Spinach Salad w/cherries, almonds, & blue cheese

    Put some fine scotch next to it and you have my perfect meal.

    "Cowboy" ribeye is another way of saying bone it ribeye IIRC. As close to a foolproof steak as one can find.

    I've been physically incapacitated for the last few weeks, not able to stand on my feet. I'm looking forward to doing SOME kind of cooking this coming weekend. I've been living on cold cuts, bread, and take out. But the crunching and cracking in my ankle suggests that I may be pulling out of this. See you soon.

    I really don't know. It's been an ongoing problem over the past twenty years. I'm about to challenge a new doctor with diagnosing it on Friday. I'll know in five minutes if he will see me twice or not. Until then it's deli cuts and sandwich bread.
